Herbed White Bean Dip

Kosher salt and pepper — 1/2 tbsp.

baby kale — 2 c.

scallions, green and white portions separated — 2 thing

fresh basil leaves — 1 c.

15-ounce can white beans, rinsed — 1 thing

garlic, grated — 1/2 clove

olive oil, plus more for drizzling — 3 tbsp.

fresh lemon juice — 2 tbsp.

Details

STEP 1

Bring large pot of water to a boil. Fill bowl with ice water. Add salt to boiling water, then in batches, using strainer, dunk kale, then scallion greens and basil, to wilt; immediately transfer to ice water to cool. Drain well.

STEP 2

In food processor, puree beans, kale, basil, scallion greens and whites, and garlic with oil, lemon juice, and 1/2 teaspoon each salt and pepper. Serve with crostini and vegetables.
